High in the Manggarai highlands above Labuan Bajo, Dapur Tara cooks the way Flores always has. Over a wood fire, never gas, with ingredients from the garden and the time each dish needs. The centerpiece is manuk cuing: free-range chicken smoked for eight hours over a low fire, the smoke doing the work. Around it come bamboo-cooked rice, black dry-land rice, fresh and smoked sambals, wild-leaf soup and garden greens. You are welcomed with a herbal drink and a tasting of local herbal arak; then, in a warm ceremony, each dish is brought to the table and named for you — what it is, where it grows, why it's cooked this way — before you share the feast family-style.
